3-Ingredient Meals
For these three recipes, you can use the chicken leg and thigh (attached) or a boneless breast (preferably skin on): You drizzle the oil over the chicken (or you can "paint" it on with a basting brush), then sprinkle the seasoning. When you reduce the heat, cook for about 40 minutes, or until there is no pink juice running out when you pierce it with a knife. Serve with Rice a Roni
Chicken #1, olive oil, tarragon. Broil, then reduce heat to 300
Chicken #2, olive oil, Knorr’s dry onion soup mix. Bake at 350
Chicken #3, olive oil, ground dry ginger, dried onion. Broil then reduce heat to 300
Pot Roast: Put a pot roast in a crock pot. Add 1 can cream of mushroom soup (undiluted) and 1 package Knorr's dry onion soup mix. Cover and cook on high for 6 to 8 hours.
Pork chops #1, dip in evaporated milk, then dip in bread crumbs (with salt and pepper)
(secret: after breading, put in frig for 15 min. then fry – keeps breading on)
Sea bass, dipped in egg, then dipped in cracker crumbs mixed with parmesan cheese fry in 2 Tblsp. oil
(serve with Kraft macaroni & cheese)
Tarter sauce: 1/2 cup mayo, 1/2 tsp. chervil,1/2 tsp. chopped sweet pickles &1/2 tsp.capers.
(Note: this tarter sauce is Xlnt on broiled halibut as well!)
Company Dinners:
Leg of lamb, Marinade: 1 jar
Barbecue on the grill
Serve with Fettucine (or Orzo) Alfredo:
Cook 1 lb. pasta according to package directions. Drain and toss with:
2 Tablespoons melted butter, 1 cup sour cream, 1 cup whipping crem and 1/3 cup grated parmesan cheese.
Add salt and pepper to taste.
Recommended vegetable:
Cut tops off tomatoes and bake for 10 min at 350. Take out of oven and drain (upside down) on paper towel.
Mix equal parts mayonnaise and grated parmesan cheese. Put the drained tomatoes in a baking pan,
put a tablespoon or two of the mixture on top of each tomato.
When you are ready to serve, put under broiler until the tops are lightly browned.
If you don't like tomatoes:
wrap individual stalks of asparagus (be sure to break off the bottoms) in procuitto or bacon.
Bake for 10 minutes at 350.
When ready to serve, broil until bacon is crisp.
